Biscotti means "twice-baked". The first baking cooks the loaf of cookie dough and the second baking dries out and crisps the sliced cookies.
Of Italian origin, biscotti are finger-shaped cookies that can easily stand up to dunking in coffee or wine.
Biscotti is a tasty afternoon snack. There is nothing else that compares to a biscotti. Once you have one of these crisp little Italian biscuits you will be addicted for a lifetime.
It makes good sense to bake a double batch of these because one batch goes too fast!
The traditional biscotti does not contain butter or oil, and uses eggs to bind the ingredients together. I think almond is the perfect flavor for biscotti. If you like your almond biscotti to have the flavor of anise, just add up to a tablespoon of anise seeds or else 1 teaspoon of pure anise extract.

| Ingredients: | Method of Preparation: | - 2 cups all-purpose flour
- 1/4 cup cut almonds
- 3/4 cup caster sugar
- 2 eggs
- 1 egg white
- 2 tsps baking powder
- 2 tsps almond extract
- 1 tsp vanilla extract
- 1/4 tsp salt
| - Preheat oven to 375°F. Toast almonds on low fire for a few mins. Set aside.
- Combine dry ingredients in a large bowl. Combine eggs and almond extract; add to flour mixture, stirring until well-blended (dough will be dry).
- Spray two 9X5-inch pans and evenly divide dough between them; spread dough evenly onto bottoms of pans with wet fingertips. Bake 15 minutes or till done. Remove from oven; turn out onto cutting board.
- As soon as loaves are cool, cut each loaf into 16 (1/2-inch-thick) slices. Place slices, cut sides down, on sprayed baking sheets. Bake 5 mins; turn over. Bake 5 mins more or until golden brown.

Personal Notes: | Serve biscotti warm or cool them completely and store in an airtight container. Whilst baking, space the logs well apart on the baking sheet because as they warm up they will spread out into domed rectangles before they set. You can buy ground almonds in the supermarket, but you can also grind blanched almonds in the food processor or chop them with a knife. You can replace vanilla extract with equal amounts of a favorite brandy.
