Biscotti di Regina (Sesame Seed Cookies) are wonderful, authentic, Italian biscotti cookies. These biscotti are very popular in Kuwait and what's surprising, they are made locally. The only difference is that they do not shape them into logs or thick slices here, but, into thin, round and flat cookies.
Biscotti di Regina means "Queen's Cookies". Tender on the inside, with a crisp coating of sesame seeds on the outside, these buttery, lightly sweet vanilla biscuits are a traditional Italian accompaniment to coffee. Their cakelike texture and sweetness make them an old favorite.
This is one recipe that is entrusted from generation to generation by each Italian family. I suppose the amount of each ingredient might differ, that makes each recipe and the flavours so unique and special.

| Ingredients: | Method of Preparation: | - 4 cups all-purpose flour
- 1 cup caster sugar
- 3/4 cup soft butter
- 3 eggs
- 1 tbsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 cup milk
- 2 cups sesame seeds
| - Combine the flour, baking powder and salt in a small bowl and set aside.
- Cream the butter and sugar until fluffy. Add the eggs, vanilla and continue to beat.
- Next, add the flour mixture and mix completely.
- To form the cookies, divide the dough in half and roll into logs 1-inch in diameter. Cut the logs into 3-inch lengths. Dip each piece of dough into the milk and then roll in the sesame seeds.
- Place the cookies on a baking sheet and bake at 180 deg until golden brown, about 15 to 20 minutes.

Personal Notes: | These will keep in an airtight container for up to 2 weeks. For Biscotti Cioccolato, add 2 tablespoons of cocoa powder to the flour. If you find it messy to dip the cookie fingers in milk and then in sesame seeds, you can try moistening the seeds with milk in a bowl and then rolling the cookie dough in them. It works! Be careful to place them quickly on the baking tray.
